Browned Butter Banana Muffins

I don't know why but I have a slight obsession with anything banana bread flavor. Browned butter gives these muffins an impeccable flavor. This picture shows them as jumbo size but you can absolutely make twenty muffins instead of ten to reduce the calories. Totally up to you! I do like big muffins.

Ingredients:

1/2 cup browned butter (113 grams room temperature)
one shot of espresso or 1/4 cup regular coffee⁣
1 cup dark chocolate chips⁣

In another bowl:⁣
2 cups almond flour⁣
1/2 cup coconut flour⁣
3 ripe bananas⁣
1/4 cup cocoa powder⁣
1 egg⁣
1/2 tsp baking soda⁣

topping: crushed Biscoff cookie crumbles

Directions:

1. Put butter in a sauce pan on low/medium heat for about 10 minutes and then take off the heat and set aside⁣
2. In that same sauce pan, add espresso and chocolate to your browned butter 

3. In a separate bowl, mash bananas

4. Mix together mashed bananas with dry ingredients

5. Add ingredients from the sauce pan to the bowl with both the mashed bananas and dry ingredients

6. Then, line a muffin tray with cupcake liners and scoop batter into each liner

7. Top each muffin with biscoff cookie crumbles

8. Bake at 375 for 30 minutes or until a tooth pick inserted comes out clean
